I have yet another yummy oatmeal-featuring breakfast treat for you guys. I haven't a clue where I got this recipe so I cannot give credit. I can however omit credit. It did not come from either Elizabeth in the Czech Republic or the Dish. Or Elizabeth the sister for that matter. I have no idea where I am going with this. I'll stop.
Wherever I happened to find this recipe, I thank them because we munch these tasty cookies for breakfast and snacks and, well, they help up my chocolate intake which is something I am always working on. Chocolate for breakfast makes me happy.
Breakfast Oatmeal Cookies
1 c. olive oil (I use grapeseed oil or light olive oil, probably any oil you want to use will work fine.)
1 c. brown sugar or honey or whatever sweetener you prefer; I use 1/2 c. agave nectar
2 or 3 eggs (I usually use 3, I'm all about protein. It makes me more pleasant to be around. And the people who live with me appreciate that.)
Beat these up until fluffy.
Add EITHER:
½ c. buttermilk
1 tsp. soda
1 tsp. baking powder
OR
½ c. rice milk, milk or the milk substitute of your choice
1/4 tsp. soda
2 tsp. baking powder
Add:
1 ¾ c. whole wheat flour (or wheat germ, or whatever combination of grains float your particular boat)
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
Then add:
3 c. oats
1 c. raisins or other dried fruit (But please, I beg of you, read my comments below before continuing with this step.)
1/2 c. nuts (optional...obviously!!!)
Again, I have the cooked raisins=roaches problem here. So at this point I divide the dough into two bowls. In one bowl I stir in some golden raisins. In the other, and more important bowl, I dump in some cocoa powder. I mix each up and drop globs about the size of a muffin top on a cookie sheet. I have done this greased, ungreased and with and without a silpat. No difference. Do what you want.
Bake at 400F about 8 minutes if using brown sugar or honey.
Bake at 375F about 9 minutes if using agave nectar or other sweeteners that burn easily.
Do not overcook. They are not very good dried out. But moist and fresh...Yeah.
The chocolate ones also make a fabulous snack if you happen to be driving across several cities in the middle of the night to be there when your really cute brand new nephew with ears that just beg to be smothered with kisses is born on a day...oh, a day sort of like today! A lot like today actually. Wink!

I plan to try this recipe, but couldn't I just use chocolate chips instead of the raisins? I have a strong aversion to raisins in just about anything, especially toast and oatmeal, though I've learned as an adult to eat them without making a face if good manners demand. I'm sure my aversion was not helped by being fed more raisins as a child if I complained about them!
